Rolls and Sushi Spice
In addition to traditional sushi and rolls, you can often find interesting varieties of these dishes in the menu of restaurants and cafes — these can be gunkans wrapped in cucumber, interesting rolls in omelettes or soy paper, or spicy and appetizing sushi spicy.
They got their name because of the special hot sauce, which is certainly included in their composition. Indeed, in the translation from English spice means “spice, spice.” And this is no accident, because the sauce consists of spicy kimchi paste, onions, garlic, Japanese mayonnaise and red chili peppers.
You can order a sushi spice at any restaurant or delivery service, as such sushi is currently in great demand. Their main feature is that they are original containers of rice wrapped with a strip of nori seaweed. The inner contents of such a “container” is filled with a special filling, which can consist of virtually any product. Traditionally, for the preparation of such sushi use fish. So, you can easily cook sushi spice with tuna. To do this, fresh rectangular fillet is cut into wide strips, which are then cut into cubes to get small fish cubes. Then the fish is mixed with sauce and spread on top of rice. Fillets of salmon, perch, squid, eel, shrimp and other marine products are also suitable for the filling. Some cooks try to experiment and serve chicken fillet, beef liver and other atypical sushi products as filler.
A special feature of the spice sauce is the Korean seasoning Kimchi, which is included in its composition. Classic pasta consists of a rather unusual combination of ingredients – these include apples, garlic, ginger, tangerines and hot red pepper. Also add salt and pepper to taste, and sometimes vinegar or lemon. The resulting paste is an indispensable complement to fish, meat and vegetable dishes, and is very popular in Asian countries.
In addition to gunkan, in the menu you can find rolls with spicy sauce. This is an interesting kind of ordinary rolls, but rice is soaked in spicy sauce, which helps to improve the taste of the ingredients. Especially good effect is obtained if you add the sauce in vegetable rolls. The taste of vegetables becomes brighter and more saturated, because the sauce gives a special piquancy to any dish. When rolling the roll on a sheet of nori, cooked rice is carefully laid out, then it is evenly greased with sauce on top. Thus, it turns out that literally all rice is saturated with seasoning. But you can do differently. Putting different ingredients on rice, you can add a couple of spoons of sauce to the filling to give it a brighter taste. Then roll up the rolls as usual and serve to the table.
Some restaurants serve hot spice rolls. It is worth noting that warm rolls appeared not so long ago and were invented in order to diversify the usual menu. In this case, the cooks make ordinary rolls, cut them into portions, then put each cut up and pour it on top with a thick spicy sauce. Such rolls are then sent for a while to the oven for the top to slightly curd. Hot spice rolls should be served immediately. Only then it is possible to fully experience their rich and spicy flavor!
